Producing a Sangiovese in "appassimento" style in Tuscany is not a common or simple procedure. Sangiovese grapes chosen for the "appassimento" are left to dry on the vine until the beginning of November and then harvested by hand in cases towards the half of September, after a careful selection and quality control. The dried grapes are fermented until they reach the desired alcohol by volume, then a part of dry wine previously prepared is added.
